Prominent Irish chef Dylan McGrath announces the closure of two Dublin restaurants, Brasserie Sixty6 and Rustic Stone, due to sustainability issues.

Dylan McGrath Closes Two Iconic Dublin Restaurants

Prominent Irish chef Dylan McGrath has informed on his Facebook about the closing of his two Dublin-based restaurants, Brasserie Sixty6 and Rustic Stone. The reason for that was the lack of sustainability that the businesses currently face, since the closure of both places was a “tight call”. Both places have been the mainstay of Dublin’s restaurant industry for 15 and 25 years, but they will not be operating anymore.

As for McGrath, the chef has stated in the same post that the hospitality industry is ever-changing, and with that change, he wants to focus his efforts on enhancing his other business, Fade Street Social, which will not be affected by the restructuring. This decision comes after the both restaurants had their finances restructured under SCARP due to heavy debts incurred during the pandemic. The Fresh filed for the first restaurant, Brasserie Sixty6, was made on the first of March, and a week later, on the first of March, it filed for McGrath’s other restaurant, Rustic Stone.

The Small Companies Administration Restricted Process is a facility for distressed small private companies under examinership. In both cases the firm debt was around a million euros, and their closures go in line with the data provided by the Restaurants Association of Ireland, where in the wake of a VAT rate hike, significant closures of businesses too place. Now, McGrath hopes to adapt to the market and keep serving Dublin’s diners at the Fade Street Social.
